Another great recipe for a chilly Fall day!
Ingredients:
- 2 1/3 c uncooked Joseph's Grainery Lentils
- 2 links Kielbasa or Polish sausage
- 1 - 46 oz can V-8 juice
- 1 onion, chopped
- 2 stalks celery, chopped
- 3 carrots, sliced
- 1 large can tomatoes
- 1 potato, diced
- 2 bay leaves
- 1/2 tsp thyme
- 1/2 tsp garlic powder
- 1 tsp basil
- 2 tsp salt
- pinch rosemary
- 4 c water
- fresh ground pepper
Directions: Wash lentils. Bring liquid to a boil, add lentils and sausage and simmer one hour. Add all ingredients except pepper If too thick add water. Simmer another hour. Add pepper and 1 Tbls vinegar before serving.
