We had this for dinner last night and it was scrumptous. We added a few ingredients to the original recipe, and we liked the way it turned out, so we'll post it with our changes.
Ingredients:
- 3/4 c dry Joseph's Grainery Lentils
- 1 lb hamburger
- 1 pkg dry onion soup mix
- 1 onion, chopped
- 4 red potatoes, chopped
- 3/4 c ketchup
- 1 tsp yellow mustard
- 2 c water
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp McCormick's Montreal Steak Seasoning
- pepper jack cheese for topping
Directions: Wash lentils, bring water (enough to cover the lentils) and
lentils to a boil, reduce heat, cover and simmer for 20 minutes; drain. Brown beef. Place all ingredients in a 2 qt (or larger) casserole dish. Bake at 350 degrees for 1 1/2 hours. Top with pepper jack cheese, cover to allow the cheese to melt.
