Ingredients:
- 3/4 c dry soybeans, soaked at least 4 hours
- 3/4 c Joseph's Grainery Hard Red Wheatberries, soaked at least 30 minutes
- 1/4 c cider vinegar
- 1 tsp salt
- fresh black pepper, to taste
- 1/4 c minced fresh dill (or 2 tsp dried)
- 1/3 c mayonnaise
- 1 to 2 small cloves garlic, minced
- 1/2 c finely minced parsley
- 1 c cottage chsses
- 3 scallions, finely minced
- 1 medium carrot, minced
- 1 small cucumber, peeled, seeded and minced
- a little bit of minced bell pepper
- optional veggies include: red onion, celery, fresh alfalfa sprouts, sliced radish, and/or fresh tomato slice (for garnish)
