Ingredients:
1 Tbs butter
1 c Joseph's Grainery Hard Red Wheat
1 small yellow onion1 c Joseph's Grainery Hard Red Wheat
1/2 of a 14 oz bag of C&W Southwest Blend Vegetables (or add your own corn, black beans, mild chilies, & red peppers)
2 c chicken broth
1/2 tsp salt
freshly ground pepper to taste
2 Tbls parsley
Directions: Preheat oven to 350 degrees. Place the Hard Red Wheat into a food processor or blender to crack the wheat. In a medium saucepan over medium heat, melt butter. Saute onions until tender (about 5 min). Stir in wheat. Add broth, veggies, salt and pepper. Bring to a boil. Transfer to a 2 1/2 quart casserole dish lightly greased with cooking spray. Bake for 45 minutes or until liquid is absorbed. Add parsley and fluff with fork!
