Walnut Biscotti

My MaMa says these biscotti are the perfect compliment to her morning cup of coffee.  She says they are simply delicious.  I thought they were a bit hard to chew, but she assures me that they are supposed to be that way.  She says that the biscotti in this picture would look as good as they taste if she hadn't forgotten to add the baking powder and baking soda.  Oops!
Ingredients:

1 1/4 c Joseph's Grainery Soft White Wheat, milled in a blender to a stone ground consistancy
1 1/4 c all purpose flour
1/4 tsp baking soda
1 Tbsp bakinb powder
1/2 tsp sea salt
3/4 c sugar
7 Tbsp butter, cut into small chunks
1 c walnut, chopped
1/2 c lemon or orange juice
1 egg, beaten
1 Tbsp lemon or orange zest

Directions:  Preheat the oven to 350 degrees.  Mix the dry ingredients and sugar.  Add the butter and blend together with a pastry fork to form a crumbly dough.  Mix in the walnuts.  Add the juice, egg and zest and mix well.  On a cookie sheet lined with wax paper, place the dough and create a rectangle, remembering that the height of the rectangle determines the length of your biscotti.  Cook for 25 minutes, then remove from the oven and let cool for 10 minutes before cutting the loaf into logs about a 1/2 inch thick.  Place the logs on the cookie sheet and bake for 8 minutes more on each side.

Pour yourself a cup of joe and enjoy!
