I keep asking for these yummy cookies, but MaMa tells me they are actually called muffins. She said she's happy that I thought they were yummy enough to be called a cookie though. :) MaMa says this recipe yields about 12 muffins and is very simple to make.
I ate these as a snack, but MaMa also served them along side soup and breakfast-for-dinner.
Ingredients:
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c maple syrup
1 c water
1/2 c oil
1 tsp vanilla extract
Directions: Preheat the oven to 375 degrees. Combine the dry ingredients in a large mixing bowl. Mix well. In a different bowl, mix together the wet ingredients and then add to the dry. Continue mixing until well blended, but don't over mix. Pour into paper-lined muffin tins and bake for approximately 20 minutes.
If you wanted a nonfat version, you could replace the oil with 1/2 c unsweetened applesauce. We meant to do this, but just forgot to. The best part...they only cost 11 cents per muffin to make! We know that because...
