The peaches on our tree aren't quite ready, but we did find some delicious peaches at the local supermarket the other day, so we decided to made these muffins for breakfast. What a yummy treat to wake up to! They also look very pretty.

Ingredients:
Peach Topping-
1 peach
1 Tbsp butter
1 Tbsp honey
Muffin Mix-
1 c old fashioned oats, ground in food processor for about 10 seconds
3/4 c all purpose flour
1/4 c sugar
1/4 c brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 stick butter, melted
3/4 c milk
1/2 c sour cream
1 egg
3 tsp ginger
Directions: Preheat the oven to 350 degrees. Pit and slice the peach. Add the butter and honey to a small skillet and melt the mixture. Cook until the syrup begins to bubble (2 minutes or so), then add the peaches and toss to coat them. Set aside.
Sift the dry ingredients into a bowl. In another bowl whisk together the wet ingredients. Mix together the wet and dry ingredients and then pour batter into greased or paper lined muffin tins. Lay the peaches over the top of the batter. Cook for 24 minutes.
