Josephs Grainery Whole Grain Cookie Mix: Pumpkin Spice Cookies

Oh, boy! Oh, boy! Grandpa, MaMa and I are so excited we can hardly contain it! Guess what we've been hard at work on for you, just in time for gift giving and cookie baking season??? A Whole Grain Cookie Mix that will serve as a base to make several different kinds of cookies! Isn't that great? Right now we have 12 different cookie recipes (with more to come!) that you'll be able to make with this basic whole grain cookie mix. With this mix, you'll be able to make everything from chocolate chip and lemon poppyseed cookies to gingersnaps and soft molasses cookies just by changing up the additional ingredients you add.

The perfect flavor for a Fall cookie - pumpkin spice!

Ingredients

• 1/3 c shortening
• 1/3 c + 1 Tbsp pumpkin purée
• 2 c Joseph's Grainery Whole Grain Cookie Mix
• 3/4 c sugar
• 1/2 c brown sugar, packed
• 1 egg
• 1 Tbsp molasses
• 1/4 tsp ginger
• 1/4 tsp nutmeg
• 1/4 tsp cinnamon
• 1/4 tsp cloves
• 1/2 c walnuts, chopped

Instructions

• Preheat your oven to 375 degrees. Thoroughly combine the shortening and pumpkin. In your mixer, with the whisk attachment, cut in the pumpkin mix into the Whole Grain Cookie Mix and sugars, until it resembles fine crumbs. Add the egg, molasses and spices at a low speed. Continue to mix for another minute, allowing the dough to fully blend and come together. Stir in the walnuts by hand.
• Form 1 inch balls of dough (we like to use our mini ice cream scoop) and place on a greased cookie sheet. Bake for 8-10 minutes. Let cool on a wire rack.
