Katie's Cookie Cutter Cookies
This will be my Cousin Katie's first Christmas, so we're naming this recipe after her, plus since she's about 9 months old we figure these will be perfect for her to gnaw on as she's teething this holiday season. Here's a photo of her and I from this past summer...isn't she a cutie? I just couldn't keep myself from giving her kisses!
You probably already noticed that we haven't decorated these cookies yet, for that we apologize. MaMa says there's a reason for that, they are going directly into the freezer for a couple weeks until it's time to start preparing those tins of Christmas Cookies, then we'll decorate these yummy snowmen!
Ingredients for Cookie Cutter Cookies:
1/2 c butter, softened
2 c Joseph's Grainery Whole Grain Cookie Mix
1 c sugar
1 egg
1 tsp vanilla
2 Tbsp milk (add more if needed)
1 Tbsp lemon juice
Directions: In the bowl of your mixer, whisk together the cookie mix, butter and sugar on a medium high speed until the mixture resembles fine crumbs. Add the egg, vanilla, milk and lemon juice and mix on low speed for about a minute until the dough comes together. Chill the dough for about 2 hours.
Preheat your oven to 350 degrees. On a lightly floured surface, roll out the dough to 1/8 thickness and cut into whatever shapes your heart desires!
Place cookies on a greased cookie sheet and bake for 7-9 minutes. Let cool and decorate as you wish.
