S'mores Cookies with Joseph's Grainery Whole Grain Cookie Mix

S'mores Cookies made with Joseph's Grainery Whole Grain Cookie Mix Base

Ready for a campfire, but have no campfire on hand?  MaMa says now that Summer is here, it's time for campfires and that means one thing...S'mores!  So MaMa and I made these S'mores Cookies with our Joseph's Grainery Whole Grain Cookie Mix Base to help kick off Summer!

Ingredients for S'mores Cookies:

1/2 c shortening
1 1/8 c Joseph's Grainery Whole Grain Cookie Mix Base
1/2 c baking cocoa
2/3 c sugar
1 egg
2 tsp vanilla
1 tsp lemon juice
3/4 c miniature marshmallows
1/2 c Golden Grahams cereal

Directions:  Preheat your oven to 350.  In the bowl of your mixer, with your whisk attachment, combine the Cookie Mix, shortening and sugar until it resembles fine crumbs.

Add the cocoa, egg, vanilla, and lemon juice and mix on low speed until the dough comes together.  Stir in the marshmallows and cereal by hand.

Drop 1" balls of dough onto a greased cookie sheet and bake for about 8 minutes.
