Whole Wheat Chocolate Chip Muffins


What can you have for breakfast, snack, or treat and even MaMa will enjoy with her morning cup of coffee?  Yep, you guess it...one of these Whole Wheat Chocolate Chip Muffins!  MaMa doesn't feel in the least bit guilty when she hands me one of these as a snack.  They're a perfect treat for a play date too.

Ingredients for Whole Wheat Chocolate Chip Cookies:
(adapted from Meatless Meals for Meat Eaters)


1 c milk
¼ c olive oil
1 egg
½ tsp vanilla
1 c all-purpose flour
1 c Joseph's Grainery Hard Red Whole Wheat Bread Flour
1/3 c sugar
3 tsp baking powder
½ tsp sea salt
1 c chocolate chips

Directions:  Preheat your oven to 400 degrees.  Line a cupcake pan with cupcake liners.

In a mixing bowl whisk together the milk, oil, egg, and vanilla.  Next whisk in the remaining ingredients one at a time, saving the chocolate chips for last.

Spoon the batter into the prepared liners (makes 12 muffins).

Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.


You'll be a hero...I could barely keep my hands off these Whole Wheat Chocolate Chip Muffins long enough for MaMa to snap a few photos of them...this is what you don't see in the photo at the top - me, sitting, waiting patiently (MaMa says that's up for debate) and then cheering once she's ready to let me have one!
