Whole Wheat Applesauce Loaf Cake


With my little brother learning to eat food, we have lots of applesauce on hand, so when MaMa saw the recipe for this Whole Wheat Applesauce Loaf Cake she knew it would be making an appearance in our kitchen very soon.

She was absolutely shocked when I devoured all of the cake, except the parts with the frosting touching it.  She said, "What kid doesn't like frosting?"  Apparently I'm the strange one, because MaMa said this frosting was quite delicious with the hint of cinnamon, so delicious that I caught her licking the spatula.


Whole Wheat Applesauce Loaf Cake

Ingredients
For the frosting—
  • 1 stick butter, softened
  • 8 oz cream cheese, softened
  • 3 c powdered sugar
  • 1 tsp cinnamon
Instructions
  • Preheat your oven to 350 degrees and grease a loaf pan well with cooking spray.
  • Cream the butter and sugar together until light and fluffy. Add the vanilla and the egg and keep beating until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg and salt. Add dry ingredients, along with applesauce, to the wet ingredients and beat until combined.
  • Spread batter out in greased loaf pan, smooth surface with a rubber spatula, and bake for about 1 hour, until cooked through and golden brown.
  • To make the icing, beat together the butter and cream cheese until well combined, then add the powdered sugar and cinnamon. Continue beating on high for 6-8 minutes until light and fluffy. Spread icing on the cooled loaf.
