Gluten Free Lentil Flour Pancakes


These Lentil Flour Pancakes might just be the yummiest gluten free pancakes you ever eat!  My little Bro and I devoured them.  Everytime mom turned around we were both asking for another.  Yep, that good.

Gluten Free Lentil Flour Pancakes


1 c cottage cheese
6 eggs
1/4 c oil
1/4 c orange juice or milk
1/2 tsp salt
3 Tbs sugar (or sweetener)
2 Tbs potato flour
1 1/2 Tbs tapioca flour
1/4 tsp xanthan gum
1 tsp baking powder
1/2 tsp vanilla

Place all ingredients in a blender and blend until smooth.  Use 1/4 cup or batter per pancake.  Set griddle at 375 degrees.
