Waffle Bites Two Ways - Whole Wheat & Gluten Free


The perfect treat for a Saturday morning, these delicious little waffle bites can be made gluten free or gluten full.  :)  We don't have one of those cute little donut makers, so when we saw on Sweet-Treats-Baking that she'd used her waffle iron to make donut bites, we were all in.  And guess what, the recipe on her site was small enough that it didn't fill us up, so we made them two different ways for the fun of the experiment - with our gluten free Garbanzo Bean Flour and with our gluten full Soft White Whole Wheat Flour.  We'll be sharing both recipes today!  However you make them, we hope you enjoy.

Whole Wheat Waffle Bites


Makes enough bites for 2 people's breakfast.

Ingredients:

3 Tbs butter, melted
1 tsp baking powder
1/4 c sugar
1/4 tsp sea salt
1/8 tsp nutmeg
2 Tbs honey
1 egg
1/2 tsp Vanilla
1/3 c buttermilk (need a buttermilk substitute?)

For the Glaze:

1/2 c powdered sugar
1 Tbs milk
1/4 tsp vanilla

Directions:  Plug your waffle iron in to warm up.  Melt your butter and set aside to cool slightly.

In a small bowl, whisk together the flour and baking powder.

In a medium bowl, whisk the sugar, salt, and nutmeg.  Add the melted butter.  Stir in the honey, egg and vanilla and mix until combined.  Whisk in the buttermilk.

Add the dry ingredients to the wet ingredients and whisk until just combine with no clumps.

Use a small scoop or tablespoon to portion the batter onto the hot waffle iron.  Cook according to the waffle iron's instructions.

Allow the finished donuts to cool slightly on a wire rack before dipping in the glaze.

For the glaze: In a small bowl, whisk together the ingredients.  If it too thick, add more milk 1 Tbs at a time.  Use immediately to drizzle or dip the cooled donuts in.
